  • Saint

    A soft, surface ripened cheese inspired by the “Saint” cheeses of central France. Creamy and oozy with a delicate white rind and a gentle, savoury flavour. As it ripens, the curd softens and the flavour becomes more pungent.

  • 1792

    A pungent washed rind cheese matured on Huon Pine boards. Its pink orange rind develops through regular hand washing in brine, encouraging surface bacteria that create its bold aroma and complex, savoury depth.

  • Raw Tom

    A raw milk semi hard cheese made with a simple, traditional make and natural rind. Aged for several months, it reflects the quality of the milk with savoury broth and mushroom notes, a buttery finish and a firm, dense texture.

  • Raw Milk C2

    A raw milk hard cheese made using traditional methods and aged 6 to 12 months. Fresh raw milk from our rare breed herd brings uniquely complex flavour, with intensely savoury, brothy, earthy and nutty notes and a slightly crystalline texture.

  • Vintage C2

    An extra aged Raw Milk C2 matured for 24 months. Made with spring and summer milk, it has a dense texture, pronounced crystals and a more intense, concentrated flavour.

The perfect whisky for cheese pairing

Unreleased Double Cask Batch No. DC124 is composed of small portions of 10 single casks, spanning American Oak and French Oak, with previous fills including Apera, Tawny and Pinot Noir. Bottled at 47.7% ABV, with a yield of 1,417 bottles.

Sullivans Cove x Bruny Island Whisky & Cheese Pack

Tasting notes

Nose

Broad and inviting, with cooking butter, brown sugar and salted macadamia. Cracked pepper, thyme and rosemary bring savoury lift, alongside pine needles, lemon sherbet and dried banana.

Palate

Full-bodied and syrupy, with firm grip and weight. Cherry, plum, blood orange and fig lead into raspberry jam, licorice, condensed milk and cream wafers. Fine oak tannin adds structure.

Finish

Long and textural, carrying date, walnut and apricot crumble into cocoa, honey and butterscotch. Mint and Earl Grey bring freshness and lift.
