American Oak Second Fill Single Cask TD0447 was distilled in November of 2013 and decanted in November of 2023 maturing at 10 years in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky.

Our American Oak Second-Fill whiskies excel in capturing the essence of Sullivans Cove's spirit, reflecting the core identity of our distillery. These whiskies undergo maturation in casks previously used for aging an earlier batch of Sullivans Cove single malt. Meticulously selected, only the highest quality casks are chosen to mature a second whisky. The outcome is a whisky with a flavour profile that showcases the richness of American oak, while simultaneously highlighting the distinct character of Sullivans Cove's exceptional spirit.

TASTING NOTES

  • Nose

    You know those whiskies that fill a room with their aroma when poured? This is one of them. Jammy and rich, it offers gorgeous custard-covered fruit notes and floral honey. The syrupy spirit bursts with tropical and stone fruits, dominated by nectarine and pineapple, with banana and peach joining in. The floral notes bring a buttery freshness, elevated by a slightly spiced oak edge that enhances the lavender and honeysuckle. Resting in the top notes is a flicker of sweet green, beautifully complementing the floral elements with sugar snap peas and cucumbers.

  • Palate

    Wow. Full texture and body, and an incredibly rounded profile with wonderful dimension. So much peach! After the initial wave of peach and further golden fruit juice, there is a moment of heavy oak towards the back palate that softens and releases notes of watermelon (with the rind), custard again, and a lovely cinnamon toast note. Initially fruity, sweet and herbal, as the palate progresses, the spirit character takes on a citrusy side, with fresh lemon emerging alongside orange and mango mineral water.

  • Finish

    A beautiful swell into the finish opens with vibrant grapefruit and a hint of white pepper. You'll find green lolly snakes, Panna Cotta, and a more musky green confectionery reminiscent of green Clinkers, along with heaps of vanilla wafer. The herbal and earthy notes emerge once more, delightfully evoking memories of bushwalking in Tasmania as notes of tea tree and native grasses gracefully carry the finish with impressive length.
