Heather Tillott stands at the helm of Sullivans Cove Distillery, leading with passion and precision, and overseeing every detail of the whisky-making process. Born on the scenic shores of NSW’s South Coast, Heather's journey in the world of spirits began in 2015 when she became part of the Sullivans Cove family.

With a background in the wine industry, Heather brings deep expertise, a refined palate, and a holistic approach to her role as Distillery Manager. Her extensive technical knowledge, paired with an insatiable curiosity for the art of distillation, drives her pursuit of creating truly exceptional whisky. Under her stewardship, Sullivans Cove has earned international acclaim, including multiple prestigious awards for its distinctive single malt whiskies. Committed to sustainable practices and celebrating Tasmanian ingredients, Heather ensures every bottle reflects the island's unique character.

Her blend of tradition and innovation has positioned her as a pivotal figure in the future of whisky. Through her work, Heather continues to elevate Australian spirits on the global stage, highlighting the rich heritage and boundless potential of Tasmanian whisky.
