French Oak ex-Pinot Noir

French Oak ex-Pinot Noir Single Cask SC0399 was distilled in August of 2017 and decanted in September of 2024 maturing at 7 years in a single 225L French oak ex-pinot noir cask. Bottled unflocked and unfiltered at 49.9% ABV, this cask yielded just 364 bottles.

Aged in a French oak ex-pinot noir cask, this whisky embodies the coming together of Sullivans Cove Distillery and our powerhouse Australian wine industry, creating an elegant, fruit-driven, and complex whisky. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel.

  • Nose

    Deep and evocative, where dark fruits and savoury intrigue entwine. Prunes and truffle lead into cherries, liquorice, and worn leather, met with the richness of strawberry jam and blackcurrant jelly. A flicker of flint, potpourri, and rose oil lends brightness, while the warmth of fresh lemon leaf, sage, dried hay, coriander and tobacco lingers. White pepper and cinnamon thread through, grounding the florals of violet and dried herbs.

  • Palate

    Umami-laden and richly textured, unfurling with the depth. The juicy, crunchy red berries of Tasmanian Pinot have been cooked down to a delightful mixed red berry jam, and lifted by cherry brightness. A full, rolling body carries silky tannins, interwoven with tea leaf, bay, and the savoury intrigue of curry leaf musk. Cola and thick cream provide contrast, met by the delicate fizz of creaming soda. Chinese roast duck, olive brine, and a hint of flint lend complexity.

  • Finish

    Supple tannins stretch the experience, carrying autumn leaves and the bittersweet warmth of cola. Alpine amaro lends its herbal grip, before hoisin, lemon rind, and coriander seed cut through with freshness. A final wave of citrus peel and Christmas pudding deepens into the dark fruit richness of plum sauce.
