French Oak Second-Fill
French Oak Second Fill TD0383 was distilled in November of 2012 and decanted in July 2023 for a maturation of 10 years and 8 months, 300L French oak ex-tawny cask previously filled with an older batch of Sullivans Cove Single Malt Whisky.
Our French Oak Second-Fill casks have a history as rich as their flavour. Initially serving as first-fill ex-Tawny casks for an earlier batch of Sullivans Cove single malt, the best casks are then selected for a second round of maturation. This maturation style beautifully displays the rich character of the French oak, while allowing the distinctive spirit character of Sullivans Cove to take centre stage.

On the 25th of July 2023 the Sullivans Cove sensory panel tasted TD0383 and annotated: “Amazing. Have you ever wanted a brandy that had the body of a whisky?” Enter TD0383. Incredible presence all the way through, billowing with both cask-driven and spirit-derived delights, syrupy, sweet and could very well replace the sauce on your sticky date pudding.
TASTING NOTES

Nose
From the first nose this is one delightful whisky. Full, syrupy, and with air, increasingly brandy-like! Lots of cask comes through initially: jammy red berries, caramel apples, rum & raisin ice cream and caramel sauce. In the mid-section, spirit character mingles with the decadence of the cask to provide orange cake batter, Calvados, rum and apples. Notes of blackcurrant, menthol and sweet grass emerge from the base. A wonderful balance of spirit and oak at play here.

Palate
The first thing of note is the impeccably thick texture of this spirit, and the round, fully developed body. What a presence! Billowing with Jersey Caramels and walnuts, a citrus twang comes next in the form of lemon tart, cutting through the caramels and vanillic charge but complimenting it with a sweet, biscuity base. Raspberry compote follows in the mid-section and notes of sweet grass linger. The base is wonderful; pecan Danish, toasted Brazil nuts, charred fig and white chocolate.

Finish
The brandy-like nature of this cask carries through to the finish with notes of sticky date pudding, now met by a refreshing burst of mineral and salt notes. Zesty, earthy and grassy. Blackcurrants are still there, in a mixed bag with dates and sultanas, and all are met by wafts of French Earl Grey tea, hay and fresh apple pieces.
