French Oak Second-Fill
French Oak Second Fill Single Cask TD0455 was distilled in November of 2013 and decanted in December of 2024 maturing at 11 years in a single 300L French oak ex-tawny cask previously filled with an earlier batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 48.1% ABV, this cask yielded just 496 bottles.
Our French oak second-fill casks have a history as rich as their flavour. Initially serving as first-fill ex-tawny casks for an earlier batch of Sullivans Cove single malt, the best casks are then selected for a second round of maturation. This maturation style beautifully displays the rich character of the French oak, while allowing the distinctive spirit character of Sullivans Cove to take centre stage.

TASTING NOTES

Nose
Earthy musk sticks spring forward from the glass, met by dried figs, honeyed carrots, and parsnip. Rich caramelised sugars fold into liquorice allsorts, while sweet herbs and dill add a fresh lift. A distinct maritime brininess lingers in the background; a key character of Sullivans Cove spirit.

Palate
Silky and full-bodied, the palate opens with toasted marshmallow, crème brûlée, and golden syrup dumplings. Toasted oat biscuits and treacle deepen the sweetness, while dark chocolate lends an earthy, slightly tannic edge - an echo of the second-fill French oak. Cranberries and cherries cut through, adding a bright counterpoint.

Finish
The finish is long and lingering, coating the palate with a waxy richness. Waffles, maple syrup, and ice cream set the tone, with ripe banana adding a final flourish. The sweetness holds on alongside the waxy texture of the spirit, drawing out the overall depth.
