Old & Rare French Oak Second-Fill
Single cask TD0022 was distilled in July of 2005 and decanted in August of 2024, aged in a single 300L French oak second-fill cask for 19 years. Bottled at 47.5% ABV, this cask yielded only 374 bottles.
Second-fill casks allow for long-term maturation without being overtaken by the influence of oak or pre-fill. The result is a whisky of perfect balance: our signature spirit character harmonises seamlessly with the soft oak profile, allowing the fruity esters from our copper alembic still, Myrtle, to shine through. In addition to the notes of dark jammy berries, aromatic spice and bright fruit, these whiskies exhibit a depth and refinement that can only come from age.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

TASTING NOTES

Nose
An intriguing dance of spice and tropical fruits emerges immediately: roasted cumin seeds and star anise intertwine with linseed oil and a whisper of camphor. Vibrant notes of ripe mango and pineapple provide a luscious counterpoint. A broad buttery popcorn character quickly evolves into butterscotch, before revealing a subtle beeswax richness. The fruit deepens with peach and strawberry fruit leather, complemented by orange and cream biscuits. Sweet roasted capsicum adds a savoury layer, elevated by a delicate floral lift of lavender.

Palate
A silky, slippery texture carries flavours that unfold in waves. Orange and chocolate lead the way, joined by the brightness of roasted pineapple. A mineral edge offers contrast, while roasted artichoke hearts and pine nuts bring depth. Herbaceous undertones introduce complexity, balanced by sweeter touches: rose jam, blackberry confections, and jelly slice. These sweetnesses swell into indulgent notes of condensed milk and crème brûlée, held aloft by a strong and vibrant spirit character.

Finish
The spirit makes its presence known, delivering a lingering briny note reminiscent of fine agave spirit. Roasted pineapple and fennel bulb bring a savoury warmth, while sweet bell pepper reappears. Malty undertones segue into confectionary delights - biscuits with butter, salted caramel, vanilla wafers, and toasted marshmallows - that leave a creamy, lingering impression.

'Refill' or 'second-fill' means this barrel has been used to mature Sullivans Cove whisky before. Refill casks are a canvas for spirit character to shine. If you asked around here at Sullivans Cove, you'd quickly find out our refill barrels are a staff favourite.
