Double Cask Brandy
Like its younger sibling TDB0008 that won World’s Best Brandy earlier this year, TDB0005 was distilled from Tasmanian Huon Valley Chardonnay and matured in a first-fill French oak ex-Tawny cask. A maturation of 13 years and 7 months has allowed the essence of the Chardonnay grape and the influence of the oak to reach a perfect balance - creating an exceptional brandy.
Sullivans Cove XO Single Cask Brandy, like our Single Cask whiskies, is bottled one cask at a time, allowing each to express its own unique character. Each cask has been aged for a minimum of eight years and is bottled completely unblended and with no added colouring or flavouring of any kind. Many of these XO Single Cask bottlings are also single varietal, allowing you to taste the individul quality of each Tasmanian wine. These single cask brandies will strike a chord with single malt whisky drinkers due to their intense depth, rich complexity and balanced elegance.

Nose
Rich and heady, drawing you in with a syrupy allure. Dried apricot, vibrant glacé cherry, and raspberry jubes lead the way, with nougat and caramel fudge adding depth. Layers of marmalade and orange rind rise through waves of tropical fruit, with dried pawpaw at the forefront. Sweet, perfumed muscatel grapes emerge, rounding out a beautifully complex nose, with honey threaded throughout.

Palate
A silky, full-bodied texture envelops the palate, where nuts, dried fruit, and lychee mingle with honey and delicate floral tones. Banana and toffee lead into quince paste, creating a swirling tapestry of fruit, sweetness, and floral notes. An undercurrent of aniseed, reminiscent of coriander seeds, provides structure, while a fudge-like richness of nougat ties everything together.

Finish
French nougat takes centre stage with its lactic creaminess, honey, and almond tones. A hint of cigar box emerges, grounding the delicate eau de vie, while oak lends a supportive framework without overpowering. Coriander seeds and licorice continue their journey from the palate, joined by lingering notes of dried figs, potpourri, and Earl Grey tea for a beautifully long and complex finish.
