Aged for 15 years and 9 months in a 200L American Oak ex-Bourbon cask, single cask TD0250 embodies the classic Sullivans Cove American Oak ex-Bourbon style. Bottled unflocked and unfiltered at 46.9% ABV, this cask yielded just 245 bottles.

Our American Oak ex-Bourbon single casks are some of our most awarded and esteemed expressions, beautifully enhancing our distinctive and fruity spirit. With a robust malt base, it unfolds layers of vanilla, caramel, coconut, fruit, and delicate hints of white floral and herbal notes. TASTING NOTES

  • Nose

    The nose opens with a wave of floral honey, bananas, and caramel toffee. Hampden funk adds character, with vibrant notes of green fizzers, lime, cola, and liquorice. Rich aromas of coffee cake, coconut, and pecan pie are balanced by roasted pumpkin and brown sugar. Earthy, sweet, and comforting, it's rounded out by white pepper, vanilla, cloves, and the distillery’s signature anise and brine.

  • Palate

    The palate is exceptionally smooth from the first sip, with a seamless transition that belies the spice suggested by the nose. It offers a dense, thick texture that is satisfying and luxurious. Prominent notes of fruit and honey are accented by a touch of cinnamon. Ripe apples and sweet orange lead the fruity profile, while golden raisins and lightly toasted sourdough add a comforting, baked quality. Cherries, lime cordial, and blackcurrant jelly contribute additional layers, making each sip a new discovery.

  • Finish

    The finish is held together with an excellent waxy grip, maintaining the whisky's presence long after the initial wave of intensity. Sweet apple pie filling, coconut shavings, and Cherry Ripe merge with chocolate-coated raisins and a strong cola note. Tropical notes of pineapple, passionfruit pulp, and sweet orange marmalade add a fruity brightness. A refreshing line of pea shoots and cucumber keeps the finish lively and balanced.

Our American Oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.
