American Oak Second Fill Single Cask TD0424 was distilled in September of 2013 and decanted in October of 2024 maturing at 11 years old in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 48.1% ABV, this cask yielded just 259 bottles.

Our American Oak Second-Fill whiskies excel in capturing the essence of Sullivans Cove's spirit, reflecting the core identity of our distillery. These whiskies undergo maturation in casks previously used for aging an earlier batch of Sullivans Cove single malt. Meticulously selected, only the highest quality casks are chosen to mature a second whisky. The outcome is a whisky with a flavour profile that showcases the richness of American oak, while simultaneously highlighting the distinct character of Sullivans Cove's exceptional spirit.

TASTING NOTES

  • Nose

    Immediate citrus territory, with a strong spirit influence from the outset. Lemonade and mandarin lead into a medley of fruit salad, kiwi, nectarine, and banana musk. Licorice adds depth, while honey, Madeira cake, and vanilla custard bring a soft sweetness. Nougat and bran cereal with honey round out the complexity.

  • Palate

    Silky, smooth, and full-bodied, with a sweet musky flavour reminiscent of love heart lollies. Sweet shredded coconut and vanilla sponge meet Madeira cake, toffee, and marshmallow. Parma violets bring a floral lift, while candied apple and a subtle hint of sweet coffee add intrigue. A touch of spice lingers, balancing the richness and keeping the profile bright and engaging.

  • Finish

    Citrus pith, vanilla wafers, and dehydrated apple rings open into a stone fruit theme of nectarine and peach. Freshly podded garden peas and an almost heather-like herbal note weave through, alongside orange, coconut oil, and Parma violets. A savoury layer emerges with sage, buttery scones, and creamy porridge. Sweet coffee and cocoa meld with a subtle saline edge - squid ink and oyster shell - adding a refreshing mineral lift.
