American Oak Second Fill Single Cask TD0429 was distilled in September of 2013 and decanted in September of 2024 maturing at 10 years, 11 months old in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 47.5% ABV, this cask yielded just 239 bottles.

Our American Oak Second-Fill whiskies excel in capturing the essence of Sullivans Cove's spirit, reflecting the core identity of our distillery. These whiskies undergo maturation in casks previously used for aging an earlier batch of Sullivans Cove single malt. Meticulously selected, only the highest quality casks are chosen to mature a second whisky. The outcome is a whisky with a flavour profile that showcases the richness of American oak, while simultaneously highlighting the distinct character of Sullivans Cove's exceptional spirit.

TASTING NOTES

  • Nose

    Soft and inviting, with tropical pops that lift effortlessly - mango smoothie, apple crumble, and fruit jelly, threaded with a gentle dusting of sherbet and cereals. Beneath, a buttery biscuit warmth, poached pear, and the delicate floral lilt of rosewater add quiet depth.

  • Palate

    A shift in texture - thick, oily, and satisfyingly chewy, with just a touch of grip, like fresh sap. Herbal layers emerge, anise, clove, nettle, and thyme, balanced by the richness of macadamia and chamomile. Just-ripe apricot and nectarine juice bring a vibrant, mouthwatering edge, tempered by the subtle tartness of sour grape skin.

  • Finish

    Gracefully tapering, leaving a lasting warmth with balanced tannins. Lychee and pine-lime jelly flicker through hints of pine needle tea and sweet fruit infusions. A touch of dried orange and lightly toasted sugars - marshmallow, maple - linger, leaving behind a quiet yet persistent memory of the experience.
