Double Cask DC30TH’s oldest component was aged 23 years, and its youngest component was aged 6 years. Maturing in a combination of French and American oak, DC30TH was bottled at 47% and yielded 1,446 bottles.

Sullivans Cove Double Cask epitomises the art of blending, created by Distillery Manager, Heather Tillott and the Sullivans Cove Distillery Sensory Team. This exceptional single malt whisky marries the distinctive qualities of French and American oak casks in every small batch. Adorned with both tropical and stone fruits, sweet notes of caramel and vanilla, spices such as cinnamon and nutmeg, plus nutty, floral and herbal nuances that all contribute to the intricate flavour profile. Double Cask offers unparalleled complexity and length, a testament to its meticulous craftsmanship.

Nose
Stunning and immediately inviting, with dried apricot, sweet apple juice, and a vibrant wave of daphne and lilac. The floral tones are balanced by licorice allsorts, anise biscotti, and a praline richness, touched with musk and even wool. Fruity layers follow—confection raspberry, banana, cantaloupe, overripe pineapple, and kiwi - finished with a hint of crème de cassis and buttery white chocolate.

Palate
Incredibly full-bodied and creamy, with a silky texture that builds into richness. Savoiardi biscuits and pastry notes lead, supported by broad American oak and softer French oak. Condensed milk and buttery layers meet bright flavours like ginger tisane, orange blossom water, fresh raspberries, and grapefruit. Lemon rind and watermelon Chupa Chups add complexity, with field honey and milk bottles offering a sweet counterpoint.

Finish
The finish carries pastry-like richness into hazelnut and salted cashews, with apricot-coconut cubes adding sweetness. Grapefruit and kiwi return, paired with rose petal jam, while a swirl of white and milk chocolate and a final touch of anise round things off. Long-lasting, with a texture that holds on beautifully.
