“Seriously special — a whisky of immense character and unmistakable gravitas. Both art and archive, it captures the historical significance of the HH era and the sheer joy of flavour without restraint.”

Heather Tillott, Distillery Manager

From the heart of the HH era

This 23 Year Old single cask whisky completes an unbroken lineage of Australia’s oldest whiskies, spanning from 16 through to 25 years of age. With this release, we become the first Australian distillery to account for every age across this range.

The whisky, HH0619, is an Old American Oak ex-Bourbon single cask drawn from the HH era, the earliest period of Sullivans Cove distillation. Between 1999 and 2003, just 162 casks were filled in total, making surviving whiskies from this era among the rarest in Australian whisky.

Tasting notes

Nose

Creamy buttered sourdough and vanilla custard, lifted by pine-lime, charred pineapple and creaming soda.

Palate

Luscious and mouth-coating: sweet oak, vanilla and maple with shortbread, milk lollies and ripe stone fruit.

Finish

Long and indulgent: buttery shortbread, pine nuts and bursts of lemon drops, passionfruit and vanilla.

For collectors and the wider industry, the significance of this release extends beyond the cask itself. The identification of the missing 23 Year Old completes the Old & Rare range not as a designed sequence, but as a natural outcome of long-held stock, patient maturation and careful custodianship of the archive
