Sullivans Cove XO Single Cask TDB0035 was distilled from 100% Tasmanian Pinot Noir and matured for 13 years, 11 months in a 300L French oak ex-tawny cask. Bottled at 47.5% abv, this unique spirit is a beautiful expression of the Tasmanian wine from which it was distilled, combining the richness of the fortified wine cask with Tasmania's incredible terroir. Sullivans Cove XO Single Cask Brandy, like our Single Cask whiskies, is bottled one cask at a time, allowing each to express its own unique character. Each cask has been aged for a minimum of eight years and is bottled completely unblended and with no added colouring or flavouring of any kind. Many of these XO Single Cask bottlings are also single varietal, allowing you to taste the individul quality of each Tasmanian wine. These single cask brandies will strike a chord with single malt whisky drinkers due to their intense depth, rich complexity and balanced elegance.

TASTING NOTES

Nose
A delightful chocolate aroma fills the glass, reminiscent of a rich ganache with tonka bean. A foundation of fine balsamic vinegar and a hint of tamari is balanced with violet and pomelo rind. Walnuts, ripe raspberries, and rum & raisin ice cream swirl in, with a dash of high-quality cinnamon adding depth. As the aroma opens up, confectionery notes of marshmallow, strawberries and cream, and mint lollies emerge, creating a complex yet inviting experience.

Palate
Silky and luxurious, the palate opens with orange, chocolate, and a touch of bell pepper. Dried mango and lychee mingle with floral rose petals, leading into a deeper mid-section of Comice pear, dried apricot, and a subtle umami quality. The back palate brings leather, prune, and a touch of gamey richness, adding to the depth and complexity.

Finish
The chocolate and cocoa notes carry seamlessly from the palate into the finish, with dried fig, raisins, and apricot joining the mix. Nutmeg, cigar box, and a hint of clove and truffle provide earthy undertones. Toasted sourdough adds texture, while lychee, boysenberries, and Pinot Noir grape notes brighten the final layers. Oak is present with a gentle grip, never overpowering, perfectly balancing the earthy and fruity elements.
