    Our French Oak ex-Tawny expressions are matured in barrels that previously held Australian Tawny, a fortified wine. These whiskies are rich and complex, with deep notes of spice, chocolate, and dried fruits, showcasing the bold influence of French oak.

  • EX-WHITE WINE

    Our French Oak ex-White Wine expressions are aged in barrels that previously held Australian white wine. These casks impart fresh fruit notes like apple and pear, alongside subtle oak spice, resulting in a bright, elegant whisky with a smooth finish.

  • SECOND FILL

    Our French Oak Second-Fill casks were initially used to mature Sullivans Cove whisky as first-fill ex-Tawny barrels. After this, the finest casks are selected for a second round of maturation, highlighting the deep, rich character of French oak while letting the spirit itself take centre stage.
