Our Process

Where centuries of practice meet a distinctly Tasmanian philosophy.

Everything we need to create world-class whisky comes from right here in Tasmania.

With ideal land for growing barley and some of the world’s most pristine water, this small island provides all the foundations.

Our process begins by combining pure Tasmanian water and 100% locally grown malted barley. In brewing, we utilise slow, traditional fermentation methods to enhance flavour complexity and quality. This patient and unrushed approach favours flavour development over quantity. 

From here, the wash is double distilled into a spirit that’s full of potential. For us, distilling is a slow, long process that focuses on reflux to promote esterification and flavour development. Our rare worm tub condensers coupled with our unique stills, Myrtle, Goldie and Eva, add incredible body and character, contributing to the whisky’s funk and complexity.

The whisky comes good when the whisky comes good; we don’t bottle to a schedule, instead, we are guided by the liquid.

We meticulously select full-size casks (200L-300L) and avoid temperature control during maturation to let the idyllic Tasmanian climate transform the spirit into a whisky that is full of character – every cask unique and different from the next.

Our dedication to long-term maturation has remained the same since 1994, enabling us to consistently release Australia’s oldest whiskies, a choice underpinned by one ethos - the whisky comes good when the whisky comes good; we don’t bottle to a schedule, instead, we are guided by the liquid.

Creating whisky that is a true pleasure to drink

Over many years, under the watchful eyes of our team, every single cask of whisky is tasted multiple times to determine when it has reached its peak, only then is it ready for release. Amidst the many factors defining exceptional whisky, the essence is simple: it must be remarkable in complexity and balance while being genuinely enjoyable.

Once decanted, fifteen steps, three pairs of hands and an obsessive attention to detail go into bottling our whisky. Every element examined with care and pride. On the side of each bottle, you’ll find a label detailing the unique barrel number and bottle number of your whisky, a detail that brings your whisky’s story to life.

When you open a bottle, you’ll find the culmination of decades of patience, dedication, and care. Any bottle bearing our label embodies a commitment to quality and excellence, offering a whisky that is a true pleasure to drink.
