French Oak Second-Fill

French Oak Second Fill TD0420 was distilled in September of 2013 and decanted in September of 2024 maturing at 11 years in a single 300L French oak ex-tawny cask previously filled with an older batch of Sullivans Cove Single Malt Whisky.

Our French Oak Second-Fill casks have a history as rich as their flavour. Initially serving as first-fill ex-Tawny casks for an earlier batch of Sullivans Cove single malt, the best casks are then selected for a second round of maturation. This maturation style beautifully displays the rich character of the French oak, while allowing the distinctive spirit character of Sullivans Cove to take centre stage.

TASTING NOTES

  • Nose

    Bursting with bright, fruity energy: lychee, apple, pineapple, and a hint of zesty lemon skin. Florals emerge beautifully - bottlebrush and apple-scented geranium - complemented by warm honeyed sweetness. Vanilla slice, with layers of custard and pastry, mingles with malty biscuit notes. A subtle waxy character ties it all together with elegance.

  • Palate

    Silky and evolving, the texture glides from medium to full-bodied. Confectionary notes of toffee apple and sherbet bring a playful sweetness, lifted by bright and lively energy. A touch of liquorice and a subtle briny edge of artichoke brine add intrigue. Glacé cherries and juicy pineapple transition into creamy coconut water, creating a tropical, refreshing harmony.

  • Finish

    A vibrant continuation of the palate, with cherries and tropical juice leading the way. A whisper of salt water and green capsicum adds intrigue, while pink musk builds into a vivid strawberry moment - those tiny alpine strawberries bursting with flavour like bubble gum. Vanilla seeds and sweet Royal Icing add softness, while a light grip of tannin provides a satisfying, gentle structure.
