Double Cask DC116's youngest component was aged 6 years, and its oldest component was aged 17 years. Maturing in a combination of French and American oak, DC117 was bottled at 48% and yielded 1,271 bottles.

TASTING NOTES

Nose
Opening dark and deep with funky tropical fruits! If this whisky were a song, the bass notes are leading the way. The influence of some very old, very delicious wine casks is immediately notable. Sweet fig jam and chilli & pineapple jam move into warm treacle and duck confit. Leather, balsa wood and strawberry coulis comes next, and as the nose opens with air, the fruit profile broadens – spiced apple puree, mandarin, apple syrup, pineapple, berry tisane, and bursts of fresh orange. An incredibly bewitching nose with so much going on. One could sit with just the aroma for hours

Palate
Classic Sullivans Cove notes of brine and bright orange greet the palate – a beautiful and cohesive transition. Alight with tingly tannins and playful oak spice, the structure is broad, initially oak-driven, and quickly opening into a world of fruit and confectionery. Soft and silky texture carries notes of grape jelly and apple & rhubarb crumble into bubble-gum, lavender, sherbet, guava and passionfruit. The savoury elements from the nose (duck confit and leather) join the brine note and rest below all, weaving a delightfully balanced yet far-reaching profile.

Finish
What a personality! Confectionary carries the journey over to the finish with icy poles, custard, and musk. More guava meets raspberry jubes, and there is a flash of crunchy sour fruit (think green apple skins and underripe peach). The finish lingers with softness, nutty undertones and beautiful texture.
