A single glass, composed to perfection

Picture Heather Tillott and the sensory team at the bench, drawing small portions from around ten casks, the youngest seven years old and the oldest twelve. A few drops more of this. A little less of that. There's no fixed formula; each batch is built by taste, until a note that was hiding finds its place and the whole settles into balance. Intuitive, patient work, closer to perfumery than to any recipe.

There's a top note of banana confectionary, dried pineapple and pear, and fizzy sherbet lifted clean from the spirit. A heart that warms as it opens: sweet and jammy fig, vanilla sponge, condensed milk and cream wafers. Beneath it, caramel, gentle oak, and fresh herbal lift.

It's the same hands that have seen Sullivans Cove named the World's Best four times over. Here, that craft turns to balance: the breadth of the whole bond store, drawn into one.

  • Nose

    Broad and inviting, with cooking butter, brown sugar and salted macadamia. Cracked pepper, thyme and rosemary bring savoury lift, alongside pine needles, lemon sherbet and dried banana.

  • Palate

    Full-bodied and syrupy, with firm grip and weight. Cherry, plum, blood orange and fig lead into raspberry jam, licorice, condensed milk and cream wafers. Fine oak tannin adds structure.

  • Finish

    Long and textural, carrying date, walnut and apricot crumble into cocoa, honey and butterscotch. Mint and Earl Grey bring freshness and lift.
