American Oak Second-Fill
Aged for 10 years and 2 months in a 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky, single cask TD0462 embodies the nuanced American Oak Second-fill style. Bottled unflocked and unfiltered at 49.2% ABV, this cask yielded just 265 bottles.
Our American Oak Second-Fill whiskies excel in capturing the essence of Sullivans Cove's spirit, reflecting the core identity of our distillery. These whiskies undergo maturation in casks previously used for aging an earlier batch of Sullivans Cove single malt. Meticulously selected, only the highest quality casks are chosen to mature a second whisky. The outcome is a whisky with a flavour profile that showcases the richness of American oak, while simultaneously highlighting the distinct character of Sullivans Cove's exceptional spirit.

TASTING NOTES

Nose
White marshmallow, jasmine and Pfeffernüsse open with a rush! Pfeffernüsse spices are presented and accounted for: Cardamom, cinnamon, ground ginger and nutmeg. But, even more prominent is the snappy layer of thin icing; a beautiful expression of the sweet vanilla abundant in American oak. Right there below the aromatic spice notes and sweetness are troves of fruit (pineapple, dried fruits such as apricot, pear, and banana chips). There is a delicious overall roundness and warmth to the nose, and a buttery floral undercurrent, think ‘warm summer day in a field of flowers’.

Palate
Bright, ripe and ever-fruity! Honey-covered tart apple slices and peaches in syrup usher in a soft and thick, waxy texture. The palate is spirit-driven, with an incredibly bright and sticky fruit profile (strawberries, jammy raspberries) that creates a beautiful dimension between the base notes of buttery crumpets and sourdough. A lemon curd note moves in and is met by expressions of sweet cinnamon and gingernut cookies, as a rose-musk/taffy note lingers above all and sees you to the finish.

Finish
The finish swells beautifully as the soft, waxy character of the spirit is quickly met by zippy citrus notes. Fresh-cut pear meets the crumpet and sourdough notes from the palate, while a dark edge of dates, rum & raisin and liquorice emerges. Before the finish fades away, a delightful tangy note makes you salivate, reminiscent of sherbet. Divine, and of course makes you want to immediately return to the glass to experience it all over again.
