American Oak Second-Fill
American Oak Second Fill Single Cask TD0448 was distilled in November of 2013 and decanted in September of 2024 maturing at 10 years and 10 months in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky.
Our American Oak Second-Fill whiskies excel in capturing the essence of Sullivans Cove's spirit, reflecting the core identity of our distillery. These whiskies undergo maturation in casks previously used for aging an earlier batch of Sullivans Cove single malt. Meticulously selected, only the highest quality casks are chosen to mature a second whisky. The outcome is a whisky with a flavour profile that showcases the richness of American oak, while simultaneously highlighting the distinct character of Sullivans Cove's exceptional spirit.

TASTING NOTES

Nose
Rich and inviting, this whisky immediately reveals a bright citrus glow of orange peel through layers of balsa wood and buttery shortbread. The sweetness deepens into oven-dried banana chips, chocolate-dusted scones, and a hint of brown sugar. Beneath the sweetness, a savoury undercurrent emerges with whispers of cherry, black pepper, wormwood, and fennel seed. Molasses and a touch of licorice lend a dark, brooding edge, while the overall aroma remains warm, complex, and deeply layered.

Palate
The texture is luxuriously creamy, with a lactic richness that amplifies the whisky’s inherent character. Biscuits and vanilla set a comforting base, while banana, mango, and coconut provide tropical brightness. Syrupy and full-bodied, it unfolds with coconut-apricot cubes and dehydrated apple. A chewy oak grip adds structure, balanced by savoury notes of roasted capsicum, charred figs, and a subtle touch of smoky bacon. Honeyed carrots bring an earthy sweetness, tying together the interplay of savoury and sweet with elegance.

Finish
The finish opens with a vibrant tropical burst, quickly settling into layers of stewed apricot and plum jam. Creamy textures of lemon curd and thick golden syrup linger, joined by cherry cola and a nostalgic hint of black licorice lollies. A structural touch of grape stem balances the sweetness, leading into blackberry tart and warm cinnamon sugar. Sweet stewed pineapple rounds out the journey, leaving a lasting impression of depth and juiciness.
