16 Year Old American Oak ex-Bourbon Single Cask TD0252 was filled in March 2008 and decanted in April 2024, for a maturation of 16 years and 1 month.
After such a long maturation, this 200L American oak ex-bourbon cask yielded only 195 bottles at 48.2% ABV.
Boasting a depth and refinement that can only come with age, our Old & Rare American Oak single casks are matured for a minimum of sixteen years in American oak casks previously used to age bourbon. Aside from the notes of vanilla, caramel, coconut, fruit, and subtle white floral and herbal nuances, these whiskies are hugely textural with incredible complexity and length of palate.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

Nose
An enticing journey begins with a tropical and herbal flourish - paw paw and cantaloupe mingle with the aromatic lift of marjoram. It’s a full and generous nose, where apricot and blackberry jam darken to the richness of cordial syrup. Kaffir lime leaf adds a bright, zesty edge, while earthy oak spices emerge - cedar, coffee, black pepper, and cinnamon, grounding the experience. There’s a deep leather note, reminiscent of a freshly oiled cricket ball, alongside a whiff of charred corn drizzled with butter and a dash of paprika.

Palate
A silky mouthfeel unfolds with a full-bodied presence. There’s a sense of harmony as liquorice and clove weave through layers of bay leaf and black pepper, leading into the warmth of toasted sourdough and freshly baked biscuits. Roasted red capsicum brings a hint of charred sweetness, which transitions into a medley of ripe apples and juicy pomelo. Underneath, a whisper of vanilla - a soft sponge cake and a vanilla slice topped with passionfruit seeds - adds a touch of decadence.

Finish
The finish is both engaging and lasting, guided by the bold character of liquorice and a cola-like richness. These notes gradually yield to the familiar comforts of vanilla and Ypovrichio, before a burst of pomelo pith adds a refreshing, slightly bitter edge. There’s a nod to roasted pumpkin, sweet and caramelised, bringing depth, while the grip of American Oak remains: gentle, silky, and full. Werther’s Originals and pickled walnuts offer an intriguing juxtaposition of sweet and briny, hinting at the spirit's complexity. A fresh twist of coriander leaves adds a green, herbal lift.

Our American Oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.
