Old & Rare American Oak
18 Year Old American Oak ex-Bourbon Single Cask TD0125 was filled in August 2006 and decanted in September 2024, for a maturation of 18 years.
After such a long maturation, this 200L American oak cask yielded only 212 bottles at 47.1% ABV.
Boasting a depth and refinement that can only come with age, our Old & Rare American Oak single casks are matured for a minimum of sixteen years. Aside from the notes of vanilla, caramel, coconut, fruit, and subtle white floral and herbal nuances, these whiskies are hugely textural with incredible complexity and length of palate.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

Nose
Soft and creamy on the approach, the aroma opens with a gentle wave of marshmallow sweetness, dried apricot, and brown sugar. Milk chocolate and browned butter bring a luscious richness, while a savoury undercurrent hints at melting cheddar and buttery crackers. Pine nuts lend a textured, nutty layer, complemented by the fresh, green notes of pine needles. The floral allure of daisies and jasmine adds a perfumed elegance, rounded off with the nostalgic warmth of sunlit beach sand.

Palate
Bright and indulgent, the palate bursts with flavours of honey and buttery pastry, evoking the texture of a freshly baked Danish. Apple tea cake and toasted muesli add a comforting depth, while the oily, waxy texture creates a mouth-coating richness. A grainy, biscuity note ties the elements together, delivering a beautifully balanced profile that feels both full-bodied and dynamic.

Finish
The finish flows gently, with a lively bounce that lingers on the palate. Warming spices - cinnamon, clove, and anise - are layered with a biscuity-pastry sweetness that continues from the palate. A herbaceous, oily richness intertwines with the tart vibrancy of dried cranberries and mulberries, while a bright note of orange marmalade leaves a final impression of complexity and zest.

Our American Oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.
