Old & Rare American Oak Second-Fill
16 Year Old 'Old & Rare' American Oak Second-Fill Single Cask TD0100 was filled in May of 2006 and decanted in October of 2022 for a maturation of 16 years, 5 months. After such a long maturation, this 300L American oak cask, previously used to mature an older batch of Sullivans Cove single malt, yielded only 406 bottles at 47% ABV.
Our Old & Rare Second-Fill American Oak single casks have been matured for a minimum of sixteen years in a cask made from American oak, that has previously matured Sullivans Cove whisky. Second-fill casks allow for long-term maturation without being overtaken by the influence of oak or pre-fill. The result is a whisky of perfect balance: our signature spirit character harmonises seamlessly with the soft oak profile, allowing the fruity esters from our copper Alembic still, Myrtle, to shine through. In addition to the notes of bright fruit, confectionary and coconut, these whiskies exhibit a depth and refinement that can only come from age.
Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager, Heather Tillott.

TASTING NOTES

Nose
The nose opens with deep vanilla warmth, classic American oak. Coconut and Bounty bar notes blend with Swiss milk chocolate, creating a rich sweetness. Layers of raspberry jam, fig, butterscotch, and fruit leather add complexity, while caramel popcorn and fudge bring a playful touch. Pithy mandarin, Huon pine, and soft Aperitivo Cappelletti hints balance with a subtle umami note, countering the sweetness with a touch of saltiness.

Palate
The palate boasts excellent body and a velvety texture, carrying the sweet and jammy notes from the nose. Pear juice, golden raisins, and dried apple wheels blend with vanilla seeds. The sweetness is enhanced by white chocolate and buttery shortbread, with sugared almonds adding a nutty touch. A bright burst of orange blossom water in the corners brings a lively, floral note.

Finish
The velvet texture continues seamlessly into the finish. Sweet notes of pear juice and dried apple wheels persist, joined by vanilla seeds and cloves, and crème pâtissière. An earthy yet vibrant pine forest floor note emerges, punctuated by a burst of Campari-like flavour with more body. A sweet, ripe grapefruit leaning towards pomelo adds a citrusy brightness. The finish is rounded out with rich, browned sugars, evoking sticky date pudding and treacle.
