Old & Rare American Oak
Single cask HH0039 was filled on the 2nd of November 1999 and matured for 22 years and 5 months before being decanted on the 14th of April 2022.
After an incredible, decades long maturation, HH0039 yielded just 58 bottles at 54%.
The style of spirit we were producing in the year 1999 was destined for long-term maturation, and the benefits of those extra years are abundant in this cask. It is creamy and textural with full body and robust oak structure.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

TASTING NOTES

Nose
One of the classic notes in Sullivans spirit of this era is agave spirit. It’s quintessential, and we're immediately met with it here, in the form of Del Maguey’s Crema de Mezcal, a blend of Mezcal and agave syrup. A beguiling mix of fruity, earthy, spicy and briny, in a very full-bodied nose.
In order of appearance: Banana Bread, walnuts, iris, green olives, cocoa powder, roasted macadamias, orange peel, Jaffas, bay leaf, cardamom, sandalwood, dusty caramel toffee, ginger syrup, buttermilk, and pink musk sticks. The spicy, earthy and woody notes swirl throughout, always making their way to the top. Hedonistic. -
Palate
A nice transition from the pink musk sticks on the nose to a blast of ripe strawberries to kick off the palate. Fruits popping everywhere: bright bursts of peach, lemon and pineapple. An incredible (and also oh-so telling of the era and style of Sullivans production) note of pine-needle tea emerges like a hero from the mid-palate, and decides that the show is now theirs. While being quite a show-stopper, the pine note is a fantastic marriage with the concurrent and vibrant gingery, minty, pineapple wave. An unshakable base of toffee and caramel fudge. Silky texture, and a very full body.

Finish
Another burst of confection pineapple, and reflecting back to the earthy roots of the nose we find cake batter, biscuits (Monte Carlo), Macaron, almonds, and a sweet roasted butternut pumpkin. Dare I say, memories of Starbucks Pumpkin Spice Chai Tea Latte?
The herbal lift of bay appears again, with a plus one in oregano. As with the palate, toffee and caramel form a solid base, and continue through the long finish, with mandarin and green olives.

Our American Oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.
