Old & Rare American Oak
Single cask HH0229 was filled on the 21st of March 2000 and matured for 21 years and 2 months before being decanted on the 28th of May 2021.
After an incredible, decades long maturation, HH0229 yielded just 209 bottles at 48.3%.
The style of spirit we were producing in the year 2000 was destined for long-term maturation, and the benefits of those extra years are abundant in this cask. It is creamy and textural with full body and delicate oak structure.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

"A fine example of this era of SC production in it’s tropical-sweet earth-textural nature. But, aside from ticking all of the boxes of being true to type, it’s absolutely delicious. The transitions between aspects are spot on, and the spirit has plenty of room to express itself. Tropical bliss."
TASTING NOTES

Nose
Very gentle entry into very pleasant territory: sweet coconut, ripe apple, light raspberry jam and pineapple juice atop chocolate, earthy nougat and carob. Yum Cha mango pancakes, crème caramel and rice pudding. Somewhere between the mid and top notes a lovely floral medley marries in well; a hint of rose and a good dose of frangipani/mystery waxy tropical flower. A deep herbal element of rooibos tea and wormwood in the corners.

Palate
Exceptional texture, silky and softly waxy. A thick, but unobtrusive body carries the tropical fruit with ease: ripe pineapple, dried mango, ripe kiwi and a heap of mandarin juice. And to everybody’s delight, the Yum Cha pancakes are here, too! A sweet, chocolate-cake earthiness of old oak lends gentle structure to the broad texture.

Finish
Dark chocolate digestive biscuits, a deep mint note, ripe cherries, summer raspberries and chocolate lead on from the subtle oak influence of the palate… And then it’s back to the tropical: pineapple and ripe cantaloupe. A pleasant, soft and waxy grip akin to olive brine carries a train of sweet dates, cheesecake and lemon curd along it’s lengthy finish.

Our American Oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.
