Reaching two decades of maturation in the Australian climate
is never simply a matter of waiting.

In its final five years alone, TD0021 was brought before our tasting panel 20 times. Each assessment was an opportunity to consider its development and decide whether the whisky needed intervention,
or simply more time.

That process continued until the cask reached the balance, depth and vibrance we had been waiting for.

Twenty years of maturation, guided with intent. Twenty years of decisions made in service of the whisky. TD0021 is our oldest French oak release to date, and one we are immensely proud to now share with the world.

The height of French Oak

Twenty years ago, Cask No. TD0021 began its maturation
in Tasmania.

What followed was two decades of attentive stewardship.
Regular tasting and assessment, careful decisions about its maturation, and the patience to leave the cask alone when time
was doing precisely what it needed to do.

Now, at 20 years and one month, TD0021 becomes the first
20 Year Old French Oak released by Sullivans Cove, and our oldest French Oak release to date.

With just 444 bottles drawn from the cask, TD0021 is now available by ballot.

Tasting notes

Nose

Oily in texture and full in body, rolling across the palate. Chocolate orange, rum balls, leather, Christmas spice, maraschino cherries, black forest cake, blackberry jam, sunflower seeds, sweet roasted pumpkin, syrup cake, orange cake layer the opening. A lovely floral, honey and blossom note sits on the orange, giving lift.

Palate

Honey and macadamia lead into maple bacon. Syrupy and thick, moving through caramel milkshake and caramel fudge, spiced orange cake, star anise, butter menthol, spearmint. Creamy and almost chewy, full-bodied with a round feeling, lifted by mint on the palate.

Finish

Confectionary fruit opens, mixed nuts and mint chocolate give way to herbal notes - chamomile tea comes through. Lychee, dragon fruit, pomegranate, cranberry bring vibrant fruit pops. Med-long finish with incredible vibrance and lingering waxy texture.

“Refill French Oak ex-Tawny casks reveal the heart of Sullivans Cove spirit beautifully - a second maturation allowing time to work its mysteries without over-oaking. Vibrant spirit-driven fruity and herbal pops balance broad sweet elements, demonstrating the depth and refinement that patient maturation brings.”
