American oak is perfect for long-term ageing which is central to what we do. Its less porous nature allows our whisky to slowly develop, resulting in vibrant layers of vanilla, caramel, and coconut and a refined, full-bodied complexity. Known for fast-growing, straight trees that are ideal for barrel production, American oak casks form the backbone of our range.

EXPRESSIONS

  • EX-BOURBON

    Our American Oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.

  • EX-TAWNY

    Our American oak ex-Tawny expressions are matured in a barrel that has previously been used to age Tawny, a Port style fortified wine made here in Australia. American Oak ex-Tawny barrels are decadent, sticky sweet and full of red fruits.

  • SECOND FILL

    'Refill' or 'second-fill' means this barrel has been used to mature Sullivans Cove whisky before. Refill casks are a canvas for spirit character to shine. If you asked around here at Sullivans Cove, you'd quickly find out our refill barrels are a staff favourite.
