American Oak Ex-Bourbon

In 2014, Sullivans Cove received its first major international recognition. The world began to take notice, and the vision that had quietly taken shape in Cambridge found a global audience.

Around a year or so later, Heather Tillott joined us. As the story goes, she was riding her bike through Cambridge, popped into Sullivans Cove to meet Patrick Maguire, saw Myrtle - our Charentais alembic style still - and stopped. Eyes widened. It was beautiful. She knew she wanted to work with Pat and Myrtle, and the rest is history.

Filled during that same period, TD0582 matured alongside the distillery's rise. Through the years that shaped our philosophy, strengthened our reputation, and ultimately led to recognition at the highest level of world whisky.

Tasting notes

Nose

Sweet and complex: cotton candy, caramelised sugar, chocolate chip biscuit and pan-fried banana in butter, with savoury nutmeg and paprika. A striking maritime note - brine, sea salt and wakame.

Palate

Melted brown sugar, toffee apple and golden syrup lead into waffle cone with desiccated coconut, fruit leather, pine nuts and malt powder. Ginger ale and smoked meat with plum sauce add unexpected depth.

Finish

Long and sustained as creamy textures carry through. Gentle oak structure holds butter, orange jelly, vanilla ice cream, condensed milk and buttermilk, closing with white chocolate and raspberry.
