French Oak ex-Apera Single Cask TD0807 was distilled in November of 2015 and decanted in February of 2025 maturing at 9 years, 3 months old in a single 225L French oak ex-apera cask.
After an incredible 9 year long maturation, this 225L French Oak barrique yielded only 337 bottles at 51% ABV.
Aged in a single French Oak ex-Apera cask, this whisky embodies the coming together of Sullivans Cove Distillery and Australia’s powerhouse fortified wine industry, unfolding layers of bright, sticky fruits intertwined with herbal lifts and the rich, distinctive spice of French oak. As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel.

TASTING NOTES

Nose
Vibrant and full. Bright berries lift from the glass, joined by warm cinnamon scroll and raisin toast. Earthy spice and buttery pastry give way to notes of dried rosemary, caramel slice and Portuguese custard tart. A rich wave of condensed milk, sticky toffee and caramel-coated popcorn rounds it out.

Palate
Soft and silky, with a rounded, full-bodied texture. Almonds and cereals set the foundation, while cherry tart and grape jelly bring a fruit-forward brightness. Beneath it all, a savoury thread of umami and golden syrup dumplings offers depth and richness.

Finish
A rush of sweet herbs - dried thyme, fennel seed and powdered ginger - balanced by roasted bell pepper and cracked black pepper. Liquorice root and angelica lend earthy complexity. Just as the spice fades, the familiar sweetness of condensed milk returns, folding everything together.
