19 Year Old 'Old & Rare' American Oak Second-Fill Single Cask TD0018 was filled in February, 2005 and decanted in May, 2024, for a maturation of 19 years, 3 months. After such a long maturation, this 200L American oak cask, previously used to mature an older batch of Sullivans Cove single malt, yielded only 228 bottles at 47.5% ABV. As one of the oldest Australian single malt whiskies ever released, this bottling is a true piece of whisky history and has incredible texture, complexity and length of palate.
Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager, Heather Tillott.

TASTING NOTES

Nose
A warm, inviting waft of freshly baked sourdough opens with a subtle nuttiness and spice cupboard aromas. Layers of fragrant orange zest, rose syrup, and the tropical tang of passionfruit leather follow. A burst of berry tisane adds brightness, while a hint of mint dances in the top notes. Rounding it all out is the sweet, natural richness of vanilla bean, full-bodied and expansive. Each element is seamlessly woven together and deeply integrated by 19 years of careful maturation.

Palate
A velvety, full-bodied whisky that envelops the palate. From the first sip, it’s clear this is something special - immediately lifting with an exhilarating burst of tropical passionfruit and mango. The richness of vanilla cream mingles with sultanas, dates, and a touch of black tea, creating a dark, sticky sweetness that clings to every corner. The oak influence is prominent, bringing waves of vanillin that intertwine with the fruit, never overpowering but lending depth and richness to the overall experience delivering both weight and elegance.

Finish
The finish concludes with a smooth transition into a space where cocoa notes dominate - dark chocolate shavings, rum, and raisin chocolates. The texture remains syrupy as hints of honey swirl with fruit, mint leaves and flickers of soy sauce carrying a delightful balance of sweetness and umami. As the finish unfolds, raspberries, banana chips, walnuts, tobacco, and licorice come forward, all grounded by a deep rooibos tea note.
