“A beautifully cohesive Double Cask, with a standout nose and a palate that delivers depth without heaviness. The oak is brilliantly integrated, sitting quietly behind the spirit’s colourful fruit as a creamy bakery character background. Layers of pre fill nuance show throughout, with florals, citrus and dessert notes staying clear and well held together.”

Sullivans Cove Sensory Team

  • Nose

Lychee, Granny Smith apple, coconut and lime jelly, lime sherbet, banana pie, macadamia, blackcurrant syrup, blueberry pie and watermelon sorbet, with a soft lactic thread.

  • Palate

Rich honey, jasmine and orange blossom, berries and jelly slice, creamy rice pudding and condensed milk, lifted by kaffir lime, blood orange and white pepper, finishing in custard tart and lamington.

  • Finish

Long and dessert-driven: honeyed carrot, butternut pumpkin, apricot yoghurt, white chocolate, golden syrup, stuffed dates, rose syrup, and orange-cinnamon tea cake.
