American Oak

Our American oak ex-Bourbon expressions are matured in a barrel that has previously been used once to age bourbon. Our most awarded expression, American Oak ex-Bourbon barrels carry notes of sweet vanilla, coconut and fruit salad.

‘Refill’ or ‘second-fill’ means this barrel has been used to mature Sullivans Cove whisky before. Refill casks are a canvas for spirit character to shine. If you asked around here at Sullivans Cove, you’d quickly find out our refill barrels are a staff favourite. 

Our American oak ex-Tawny expressions are matured in a barrel that has previously been used to age Tawny, a Port style fortified wine made here in Australia. American Oak ex-Tawny barrels are decadent, sticky sweet and full of red fruits.
