White wine casks bring a particular character to French oak. Bright fruit and freshness meet the structure and firm tannin of the oak, creating a maturation style with both lift and presence.

In Australian conditions, that structure asks a great deal of the spirit. Careful monitoring and disciplined restraint are essential, allowing cask and spirit to develop together without one overwhelming the other.

Whisky from wine country

Tasmania is as remarkable for its wine as it is for its whisky. In the Coal Valley, some of the island’s finest cool-climate vineyards are on our doorstep, producing globally acclaimed wines – and casks capable of bringing remarkable character to whisky.

For us, these casks represent a meeting point between two of Tasmania’s most celebrated crafts. The character of the wine, the French oak and our spirit each have a role to play, creating possibilities in maturation that belong distinctly to this place.

It’s a relationship Director of Whisky Creation Heather Tillott understands from both sides. With a background in wine before turning to whisky, Heather brings a particular perspective to these casks – understanding both the character they carry and how that character can develop alongside the right spirit into something incredible.

The latest expression of this careful work is Cask No. SC0814, matured for seven years in French oak ex-Chardonnay.

Tasting notes

Nose

Sticky and deep. Sticky blackberry syrup, strawberry jam, warm scones, fruit loaf, dates, plums, rose petals, cinnamon stick, chocolate mousse, chocolate wafer layer upon each other. Liquorice, anise and angelica speak evocatively to the heart of Sullivans Cove spirit. Mixed fruit mince pie completes the picture.

Palate

Creamy and velvety, full-bodied. A seamless flow through rum and raisin, chocolate coated pineapple, sweet chili jam, rose water, Turkish delight, mandarin syrup, wattle seed, peaches and cream, fruit syrup, red grapes, sweet tobacco, sweet oak and char, dark caramel, butterscotch.

Finish

Juicy and with generous length. Biscuit, chocolate muffin, date slice, treacle tart give way to hazelnut and praline. Red cordial, mixed currants, gooseberries and herbaceous notes trail through sticky date pudding, dragon fruit, lychee blast, and raspberry coulis, lingering long on the palate.
