Old & Rare French Oak Second-Fill
Single cask TD0110 was distilled in June of 2006 and decanted in March of 2025, aged in a single 300L French oak second-fill cask for 18 years, 9 months. Bottled at 48.2% ABV, this cask yielded only 417 bottles.
Second-fill casks allow for long-term maturation without being overtaken by the influence of oak or pre-fill. The result is a whisky of perfect balance: our signature spirit character harmonises seamlessly with the soft oak profile, allowing the fruity esters from our copper alembic still, Myrtle, to shine through. In addition to the notes of dark jammy berries, aromatic spice and bright fruit, these whiskies exhibit a depth and refinement that can only come from age.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter from our Distillery Manager.

TASTING NOTES

Nose
Rich and savoury, the nose opens with deep herbal tones of sage, thyme and rosemary, layered with liquorice ice cream, star anise and salted caramel. Roasted plums and stewed peaches bring warmth and fruit weight, while subtle hints of cinnamon quill, dried curry leaf and native apples evoke the scent of warm bushland. Texturally, it’s oily and chewy, with mild savoury tannins drawing the aromas inward.

Palate
Creamy and full-bodied, the palate is carried by spiced custard and baked apples, unfolding into brown sugar, poached pear and buttery shortcrust pastry. Honeyed macadamias and candied walnuts add texture and richness, while a delicate tannin frame gives structure and lift. There’s a sappy, spicy quality that brings energy and flow to the dense, layered sweetness.

Finish
Bold, lingering, syrupy and expansive. Treacle and golden syrup dumplings sit alongside notes of blackberry sauce, ginger wine and caramelised pineapple. A flourish of rose water, Turkish delight and dried apricot rounds out the finish, leaving a plush, aromatic impression.
