Double Cask

In 2013, we distilled Tasmanian wine into brandy using our Charentais alembic still, maturing it in American oak. It was a singular endeavour, one we have never repeated. The brandy was eventually bottled, and the casks set aside.


Now, those casks have held our whisky.


In Double Cask Batch No. DC0127, three of these American oak ex-brandy casks have been married with a single French oak ex-Apera cask.


More than a decade later, those casks connect what we made then with what we make now - the character of our brandy carried forward through the oak and into our whisky.

We are whisky crafted in wine country, and these casks hold that history within them.


Tasted alongside our historic brandy, the Sullivans Cove character is unmistakable. The same generous body and bold vibrance run through both - a connection across more than a decade, carried through the oak.

  • Nose

    Soft and billowy. Syrups and vanilla lead into crème brûlée, brandy snaps, wafer and fudge. Meringue, Jersey caramels, white chocolate, dried fruit. A fruity, zingy funk signature of Apera, and a distinct grape note remain unmissable - shaped by wine and brandy cask influence.


  • Palate

    Creamy and full-bodied. Caramel popcorn, treacle, butterscotch cream and brandy fudge, moving into apricot, rockmelon, dried fruit and pistachio. Just enough French Oak to give a gentle touch of tannin structure to the American Oak creates wondrful structural balance.


  • Finish

    Gentle tannin meets notes of white wine and green grapes, candy cane and bright mint leaves. Dark chocolate and brandy-soaked fruit trail into hot cross buns, wild fennel and herbal spice.
