In 2004, Sullivans Cove entered a new chapter. Having outgrown our original home on Hobart's historic waterfront, the distillery relocated to Cambridge — the site we still call home today. Then-head distiller Patrick Maguire had ambitious plans for Sullivans Cove whisky, and the move marked the beginning of a new era.

It was then, right at the beginning of our new chapter, that Old & Rare 20 Year Old American Oak Cask Nº TD0002 was filled, marking the very first production run at our new home.

Whisky from another era

As the first spirit flowed from our still, Myrtle, in Cambridge, this cask began a journey that would span two decades. Laid down at a moment of possibility, TD0002 predates the awards, accolades, and international recognition that would follow.

While the world discovered Sullivans Cove, the whisky matured.

Today, around twenty years later, TD0002 offers a glimpse into the earliest days of our Cambridge era — a whisky from a time before we knew what lay ahead.

Tasting notes

Nose

Dark and dense, with roasted pumpkin and drinking chocolate, followed by glacé cherry, warm baking biscuits and treacly sweetness. Savoury umami notes of rosemary, sage and toasted cereals add depth.

Palate

Full-bodied and thick, with a smooth, creamy flow. Glacé ginger syrup, chicory and white pepper sit alongside pineapple, pawpaw and savoury roasted vegetables.

Finish

A vivid burst of pineapple gives way to lollies and blackcurrant jelly. Liquorice, fennel seed and a firm oak grip follow, lifted by menthol and dark spice.
