American Oak Second-Fill

American Oak Second Fill Single Cask TD0461 was distilled in December of 2013 and decanted in September of 2024 maturing at 10 years, 9 months old in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 46% ABV, this cask yielded just 250 bottles.

Our American Oak Second-Fill whiskies excel in capturing the essence of Sullivans Cove's spirit, reflecting the core identity of our distillery. These whiskies undergo maturation in casks previously used for aging an earlier batch of Sullivans Cove single malt. Meticulously selected, only the highest quality casks are chosen to mature a second whisky. The outcome is a whisky with a flavour profile that showcases the richness of American oak, while simultaneously highlighting the distinct character of Sullivans Cove's exceptional spirit.

TASTING NOTES

  • Nose

    A burst of fruit, lively and bright. Sherbet-like pops of citrus and tropical notes, with spicy balsa wood and a touch of floral perfume. Super sweet pineapple and kiwi fruit mingle with pawpaw and mandarin juice. Pomegranate and crisp apples bring freshness, while a distinct musky lime note - reminiscent of green frog lollies - adds intrigue.

  • Palate

    Silky from the first sip, with layers of shortbread and buttery pastry. A hint of lamb fat lends a subtle gamey depth, balancing the sweetness of glacé cherries, toffee apple, and classic boiled lollies. Watermelon adds a juicy freshness, while ginger beer and white pepper bring a gentle warmth that lingers.

  • Finish

    Watermelon dusted with salt, followed by soft notes of apple, cotton candy, and marshmallow. Sweet yet refined, with a light touch of anise and the floral lift of Gewürztraminer. Impressively long, drawing out the delicate sweetness and spice.
