Our first-ever release of a cask strength age statement whisky is presented in a new Tasmanian Blackwood (Acacia melanoxylon) box sourced from sustainably-grown timbers in the Huon Valley. Each box has been assembled by hand, and features unique patterning reflective of the never-replicated nature of our whisky.

A rare intersection: French Oak at Cask Strength

This Old & Rare French Oak ex-Tawny is our first age statement whisky to be bottled at cask strength. 17 Year Old 'Old & Rare' French Oak ex-Tawny Single Cask TD0297 was filled in July of 2008 and decanted in October of 2025 for a maturation of 17 years, 3 months. After such a long maturation, this 300L French oak cask yielded only 343 bottles at cask strength of 61.3% ABV.

Boasting a depth and refinement that can only come with age, our Old & Rare French Oak single casks are matured for a minimum of sixteen years in French oak casks previously used to age Australian tawny port-style fortified wine. Aside from the notes of juicy dark fruits, chocolate, spice, nuts and earthy herbal nuances, these single casks display incredible complexity and length of palate.

Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter from our Distillery Manager, Heather Tillott.

Tasting notes

Nose

Grapefruit skin, old Barossa Tawny depth, glacé pineapple, candied apple and classic Sullivans waxiness. Water brings orange, sourdough and a gentle floral lift.

Palate

Oily and full, opening with kumquat, green apple and lychee. Water reveals nougat, cantaloupe, cola and a touch of curry leaf.

Finish

Choc-orange, jasmine, borage, shortbread and Pu’erh tea, with aloe vera emerging when diluted.
