Old & Rare American Oak
18 Year Old American Oak ex-Bourbon Single Cask TD0131 was filled in August 2006 and decanted in December 2024, for a maturation of 18 years, 3 months.
After such a long maturation, this 200L American oak cask yielded only 172 bottles at 47.5% ABV.
Boasting a depth and refinement that can only come with age, our Old & Rare American Oak single casks are matured for a minimum of sixteen years. Aside from the notes of vanilla, caramel, coconut, fruit, and subtle white floral and herbal nuances, these whiskies are hugely textural with incredible complexity and length of palate.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter from our Distillery Manager.

“Fascinating and full of character. The earthy, umami, almost gamey depth of the spirit shines through beautifully, evolving into something altogether new when met with the oak. The influence of old American oak bourbon cask is unmistakable - offering structure, weight and a dark herbal-fruit interplay.”

TASTING NOTES
-
Nose
A generous nose layered with brown sugar and stewed peaches in syrup, underpinned by warm buttery biscuit crumb and fresh apple slice. Cherry cola and cherry marmalade lend a nostalgic sweetness, joined by the dense, chewy character of fruit leather. Passionfruit shortbread offers a bright lift. As it breathes, the profile shifts between earthy, umami tones and vibrant fruit.
-
Palate
Richly textured, dark and fruity, with dried herbs (rosemary and thyme) introducing a savoury counterpoint to the deep fruit notes. Dried cherry, fruit pie and blackberry jam unfold into dense, sticky raisin and fruit loaf. There’s a flicker of charred pineapple brightness, grounded by the chewy sweetness of coconut rough and rocky road.
-
Finish
The finish carries weight and persistence, with dark chocolate and rum-and-raisin chocolate leading the way. Plums and date slice evoke a slow, simmered richness, while walnuts and a subtle touch of olive brine add texture and savoury edge. Lavender chocolate and jam-filled lamingtons linger long, with a full, fluffy body and a grippy, syrupy sweetness.

“Our dedication to long-term maturation has remained the same since 1994, enabling us to consistently release Australia’s oldest whiskies, a choice underpinned by one ethos - the whisky comes good when the whisky comes good; we don’t bottle to a schedule, instead, we are guided by the liquid.”
