Sometimes a whisky surprises us

When we decanted 17 Year Old Cask Nº TD0083 in October of 2023, it sat quietly in our warehouse, waiting for its moment to shine.

While other Old & Rare American Oak casks took the limelight (like when Cask Nº TD0033 was awarded Australia’s Best Single Cask Single Malt at the World Whiskies Awards), this one was put into the Tasting Room at our Visitor Experience without fanfare.

Time and again, our guests at the distillery chose this whisky as their favourite from our tasting flights.

Unlike our other American Oak casks, this whisky was matured in a 300L hogshead that has only ever held Sullivans Cove spirit. While we might describe our other whiskies as “ex-Bourbon” or “ex-Apera”, this one is perhaps best described as “ex-Sullivans”.

The result allows our spirit style to be enjoyed in its purest form, with subtle oak notes presenting as spice alongside a delicious savoury body unlike anything else in the Sullivans Cove range.

Tasting notes

Nose

Murky fruity funk, sour cherries, sherbet, cinnamon, star anise, herbs, popcorn, blackcurrant.

Palate

Smooth and full-bodied, figs, peaches, raspberry jam, nuts, quince paste, saline.

Finish

Jammy Gamay, chocolate bullets, roasted pumpkin, fennel, coriander, cinnamon, treacle.
