Old & Rare American Oak
16 Year Old American Oak ex-Bourbon Single Cask TD0226 was filled in February 2008 and decanted in August 2024, for a maturation of 16 years and 6 months.
After such a long maturation, this 200L American oak ex-bourbon cask yielded only 170 bottles at 49% ABV.
Boasting a depth and refinement that can only come with age, our Old & Rare American Oak single casks are matured for a minimum of sixteen years in American oak casks previously used to age bourbon. Aside from the notes of vanilla, caramel, coconut, fruit, and subtle white floral and herbal nuances, these whiskies are hugely textural with incredible complexity and length of palate.
As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a handmade, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

TASTING NOTES
-
Nose
A bright burst of orange sherbet pops out of the glass - soft, round, and pillowy. The profile progresses into floral, fruity, and creamy territory, with layers of whipped butter, mandarin, and orange and poppyseed cake. A medley of chocolate-based biscuits adds richness, while banana ice cream and apricot jam bring sweetness, all atop a touch of flint.
-
Palate
That same pillowy softness from the nose carries through, wrapping around notes of ginger liqueur and oat biscuits. A playful mix of sourdough and warm bakery spice balances fresh basil. Almonds and walnuts then rise from the base to bring a nutty richness, as sundried tomatoes and orange cordial add a sweet-savoury contrast. White peaches then round it out with a juicy lift and take you to the finish.
-
Finish
As the finish opens range cordial lingers from the palate, carried by a gentle briny edge. Pine nuts and a growing nutty character build alongside stewed peaches, apple, and honey. A final flourish of crème brûlée leaves a rich, caramelised sweetness.

“Our dedication to long-term maturation has remained the same since 1994, enabling us to consistently release Australia’s oldest whiskies, a choice underpinned by one ethos - the whisky comes good when the whisky comes good; we don’t bottle to a schedule, instead, we are guided by the liquid.”
