Tasmania is wine country as much as it is whisky country.

For decades, French oak casks have arrived at Sullivans Cove carrying the influence of the wines they once held, before going on to shape some of our most distinctive single malts.

This spring, our first Seasonal Capture brings together four whiskies connected by that lineage.

From our first 20 Year Old French Oak, to ex-Chardonnay and ex-Pinot Noir single casks, and a new Double Cask shaped by casks from our own historic brandy programme, each offers a different perspective on French oak, provenance and maturation in the Australian climate.

Together, they capture a particular moment at Sullivans Cove.

Cask Nº SC0814

Matured for seven years and seven months in a single French oak ex-Chardonnay cask, SC0814 explores a maturation style that demands careful monitoring, patience, and restraint.

French oak brings structure and depth, while the cask's white wine provenance offers another perspective on the relationship between Australian wine country and Sullivans Cove spirit.

A final allocation from a remarkable French Oak e-Pinot Noir cask.

Matured for seven years in a 225L French Oak ex-Pinot Noir barrique, SC0387 is another compelling example of the provenance found in Australian wine casks, and the distinctive influence they can bring into our spirit.

With just 96 bottles remaining, this is the final allocation of Cask Nº SC0387.
